Recipe: Favourite Black Bean Soup

This fibre and protein packed soup is so full of flavour, it’s sure to become a family favourite and staple on these colder winter days!

Black Bean Soup

Let this delicious soup be your next weeknight meal packed with protein, fibre and flavour!

The start of this recipe is the black bean which is an excellent source of plant-based protein. It is high in fiber, promoting digestive health and providing sustained energy and also rich in iron, which is important for oxygen transport in the body.

Strong flavour boosters, garlic and cumin, have anti-inflammatory and immune-boosting properties. May help improve cardiovascular health and digestion. While Cayenne Pepper contains capsaicin, which may boost metabolism and has anti-inflammatory properties as well.

Let’s not forget about the high vitamin C contend in Tomatoes and limes that support our immune function. All of these ingredients combined to make this tasty and easy soup!

Recipe

2 tbsps Extra Virgin Olive Oil

1 Yellow Onion (finely diced)

2 stalks Celery (diced)

1 Carrot (large, chopped)

8 Garlic (cloves, minced)

1 tbsps Cumin

1/2 tsp Cayenne Pepper

6 cups Black Beans (cooked, drained and rinsed)

3 cups Diced Tomatoes

2 cups Water

2 Lime (juiced)

👩‍🍳 Directions

Makes 6 servings

  1. Combine all ingredients together in your slow cooker. Cook on high for 4 hours, or on low for 6 hours.

  2. Pour approximately half the soup into a blender (or use an immersion blender) and blend into a smooth puree. Be sure to leave a spot for the steam to escape. Add the pureed soup back into the slow cooker and mix everything well. Ladle into bowls, top with desired toppings and enjoy!


  3. If you don't have a slow cooker, make it on the stove top in a large stock pot instead. Add all ingredients to the pot and bring to a boil. Once boiling, reduce to a simmer. Cover and let simmer on low for an hour before blending.
